Egg sandwich

  • 4 boiled egg whites

  • 4 brown bread slices

    – For chutney

  • 1/2 cup coriander leaves

  • 12 to 15 mint leaves

  • 1 garlic clove

  • 1/4 inch piece of ginger

  • 1/2 tsp cumin (jeera)

  • Lemon juice as needed

  • 1 tbsp fresh grated coconut

  • 1 green chilli, slit

    – Veggies (adjust as required)

  • Onion rings

  • Grated carrots

  • Lettuce leaves (optional)


  1. Hard boil the eggs. Remove their shells. Discard the yolks.

  2. Grate the white parts of the eggs. Keep them aside.

  3. Put all the ingredients for the chutney in a blender and blend them to a smooth paste using 1 to 2 tbsp of water.

  4. Toast the slices of brown bread.

  5. Spread the chutney on all four slices of bread.

  6. Place the grated egg whites and the veggies on two of the slices of bread.

  7. Cover the sandwiches with the other two slices. Press them down with a wooden spoon.

  8. Cut them into halves before serving.
