Hungarian Cucumbers Salad for Diabetics

This refreshing Hungarian cucumbers salad is dressed in a mix of vinegar and Splenda. You can make it ahead and keep it in the fridge for up to 1 day before serving.

  • 4 tbsp red wine vinegar
  • 5 tbsp Splenda (or equivalent)
  • 2 medium cucumbers


  1. Mix vinegar and Splenda together until dissolved. Taste for sharpness and adjust if desired.
  2. Peel and very thinly slice the cucumbers. Add to vinegar mixture and toss. Cover and let stand at room temperature for at least 30 minutes, up to 1 day. Toss occasionally to distribute flavors.
