This refreshing Hungarian cucumbers salad is dressed in a mix of vinegar and Splenda. You can make it ahead and keep it in the fridge for up to 1 day before serving.

- 4 tbsp red wine vinegar
- 5 tbsp Splenda (or equivalent)
- 2 medium cucumbers
- Mix vinegar and Splenda together until dissolved. Taste for sharpness and adjust if desired.
- Peel and very thinly slice the cucumbers. Add to vinegar mixture and toss. Cover and let stand at room temperature for at least 30 minutes, up to 1 day. Toss occasionally to distribute flavors.
